Meyer Lemon Granita with Rose Infused Honey and Sweet Alyssum

I love the combination of the Meyer lemon juice and the sweet honey in this recipe.  Sweet Alyssum adds a touch of pepper flavor and a pretty touch. Enjoy it on a warm spring day.

Serves 4

Ingredients

  • 1 cup granulated sugar

  • 1 1/4 water

  • 1 cup fresh Meyer lemon juice

  • Zest from 1 Meyer lemon

  • 1 tablespoon Rose Infused honey , plus additional for serving

  • Sweet alyssum for garnish

Instructions

  • Combine the water and sugar in a small pot and bring to a boil until all the sugar dissolves. Stir in the lemon juice, zest, and honey. Remove from the heat and carefully pour the mixture into a medium bowl. Chill in the refrigerator until cool.

  • Transfer the bowl to a freezer and freeze the mixture for approximately 3-4 hours. Remove the bowl from the freezer, mix the mixture with a fork and return the bowl to the freezer.

  • When ready to serve, scoop into individual bowls or glasses. Drizzle a little honey over the top and garnish with the sweet alyssum. Serve immediately.
